The International Congress of Meat Science and Technology (ICoMST) is an annual global scientific conference addressing current research in all aspects of the production and distribution of animal protein food products. The 2020 conference is expected to bring together up to 1,500 scientists and students from academia, industry, government and other organizations. ICoMST enhances the cooperation and scientific information exchange between the academic and industry researchers in the field of meat science and technology running the gamut from basic cellular biology to applied processing work. Leading scientists from North America, South America, Europe, Australia, Africa and Asia will converge to expand their knowledge and impact on global meat science issues. The 66th ICoMST in 2020 will be hosted by the American Meat Science Association and is combined with AMSA’s annual Reciprocal Meat Conference. This is only the fourth time that this meeting will have been hosted in the United States. An emphasis of this meeting will be how to apply technology to understand how to efficiently produce safe, nutritious, high quality meat products to consumers in every corner of the world. One third of the audience will be students in animal and food science programs, many of who are pursuing advanced degrees.
